Purpose

To batch prep scratch-cooked items, assemble trays, package meals, and perform food handling tasks.

Activities

  • Washing, cutting, seasoning
  • Panning food
  • Assembling grab-and-go meals
  • Packaging breakfasts and snacks
  • MUFPP-compliant fruit/vegetable prep

Considerations

  • Stainless steel prep tables (adequate number and size)
  • Multiple prep sinks with drainboards
  • Food processors, blenders, mixers
  • Adequate outlets
  • Clear work aisles (many sites are “shoulder to shoulder”)
